True steak tips come from various muscles in the sirloin and round. While part of the sirloin tip is often used, steak tips can also come from flap meat, flank steak, as well as tenderloin tip and parts of the round. A whole piece of flap meat weighs about 2 1/2 pounds.

Japanese beef is the most prized beef in the world. Its buttery tenderness provides an incredible dining experience. A5 is the highest grade available for Wagyu beef. Just as the United States has a beef grading system, so does Japan for Wagyu beef. Japan’s BMS scale goes from 3 to 12, with 3 being the basic minimum of marbling a steak should have, and 12 being a steak that is almost white with marbling.

With the Wagyu breed of cattle, the steak tips contain more marbling, which creates a more velvety texture and rich flavor than steak tips from other breeds of cattle.
